Food on skewers can include a whole variety of items. Choose lean meat that cooks quickly and, where vegetables are included, items like small whole onions should be par-boiled first to speed up cooking. Otherwise most suitable vegetables such as tomatoes, green peppers, mushrooms and courgettes will cook quickly enough along with the meat. Select foods which go well together and baste with oil, or a special baste, while cooking. Have ready hot finger rolls and, when each skewer is cooked, enclose the food in the roll and draw out the skewer. Serve the rolls hot at once. Serve the food on skewers with baked potatoes or hot bread and a crisp salad.
