This is what to do with leftovers from a roast stuffed loin of pork. Make a fruit butter by mixing chopped pickled plums or apple sauce with softened butter or polyunsaturated margarine. Spread it on thick slices of cottage loaf. Line the sandwich with mixed salad leaves, and lay sliced pickled onion and gherkins between slices of meat and the bread.
