Some breads are more suitable for individual servings, such as pitta, whereas a ciabatta loaf will do for 2–4 people. These are not small, neat sandwiches, but two-handers with deep fillings. The fillings depend on what you have available, but here are some combinations that work well (all with leftovers from Sunday in mind):
Sliced roast chicken, sliced courgettes, watercress and caper mayonnaise to spread on the bread.
Pink roast lamb, ratatouille, lettuce and pitted black olives chopped into mayonnaise or butter for spreading on the bread.
