Using the freezer in May

Think ahead for dinner parties or eating out-of-doors. The cream of watercress soup and cucumber soup with mint are lovely fresh soups that freeze well. Thaw in the refrigerator and serve cold. Keep a small (85-g, 3-oz) pack of frozen smoked salmon for the smoked salmon tart. It’s a good item for a picnic-especially if it’s a special occasion like an evening at Glyndebourne. You’ll find the vanilla cheesecake freezes well too, marvellous and moist for packed lunches.

Pineapples are a good buy and cheap at the moment. For freezing it’s best to cut the pineapple in rounds. Stand on end and cut down the sides to remove the outer skin. Then cut across into slices and using a small knife or pastry cutter remove the centre circle of hard core. Layer with sugar into rigid containers; this is good with a drop of kirsch added afterwards or for using in fresh fruit salads.
