All game must be hung before freezing – the length of time depends on individual taste. Pluck and clean birds and remove as much shot as possible. Then truss birds as for roasting to keep a neat shape. Old or badly shot birds can be made into casseroles or pâtés.

Pheasant Hang for 7–10 days according to the weather. A short spur at the back of the leg on a cock pheasant indicates a young bird. Hen birds should have a supple beak. Hold the full weight of the bird by the lower beak and if it doesn’t bend or break it’s last year’s bird. Pack in polythene.
