Mustard Sauces

Mustard sauces are particularly useful to alter the structure of a menu. For example, if you are using a red wine butter with an entrée, you would not wish to use a sauce bordelaise with the main course. A mustard sauce, however, may be entirely appropriate. Mustards can also be used to give added vigour to poached fowl or fish.
