I have sometimes thought that my time at boarding school was the motivation for becoming a chef. The ways in which the cooks managed to take perfectly good, fresh ingredients and turn them into unrecognisable slush must have taken years of experience! The following recipes I hope will have a salutary effect on future generations of school cooks.
A beautiful dinner could be composed from vegetables alone. However, may I suggest that you leave all thoughts of brown rice back in the health food shop!
