Did Phia Sing leave behind him only the two recipe notebooks reproduced in the preceding pages, or was there a third? The question was posed, in the Introduction. We have also suggested to Phia Sing’s relations that if there was a third notebook it might have contained recipes for desserts, which are entirely lacking in the two we have. These relations have assured us that this is unlikely, and that if there was a third notebook it would have contained recipes similar to those in the first two. Phia Sing would not, they say, have thought it necessary to provide written recipes for desserts.
