Known in Fez as the poor man’s bistilla, trid is said to have been the favourite food of the prophet Mohammed.
Much skill is required to make trid, as well as a turn of the hand which is not easily acquired. You can, however, buy them ready-made in all the restaurants of Boujeloud and they are excellent.
The dough is the same as that used for rghaif. Knead it for a good half hour until it is exceedingly elastic, then put the dough to soak in oil in an earthenware bowl. The sheet of pastry is not cooked on a stove but on the gdra del trid. With well-oiled hands take a ball of dough the size of an egg, stretch it quickly in the gsaa. The sheet will cook quickly, remaining soft, white and transparent. When cool pile up on a round dish.
