Beef varies in quality. To safeguard you against paying for quality in meat which you do not get, the Government has made compulsory the grading of all meats with the exception of pork. Identify the grades on the meat with the letters "AA" for choice, "A" for good, "B" for commercial and "C" for utility. Low grades are inferior in tenderness and eating qualities. "AA" beef has a fresh bright red color, the fat is firm and white.
