Clarissa writes: People have these old-fashioned, pre-conceived notions about game. They seem to think that it is the province of either the rich or the aristocracy or else that it is putrid and maggot-ridden. All this is nonsense.

You can now buy game in the supermarket, and this has the advantage of being prepared in amorphous little packages bearing little resemblance to the original creature. However, as Jennifer who will shop in such places–points out, it is very seldom properly hung. Whilst very few people nowadays want to hang game until the head falls off, it is necessary to let it hang for a few days to a week in order to enhance the flavour and to tenderise it in the same way as meat. Another disadvantage of supermarket game is that it is not particularly cheap.
