I try to keep the equipment chapters of my cookbooks as short and as simple as possible, with everyday, affordable recommendations, and this one is no exception. You don’t need lots of fancy shiny gear in order to cook from scratch; I prefer to prioritize worktop space and a sense of calm over a cluttered environment, although I do admit to having a few more pans and spoons than those listed here.
