Fresh peas, beans, and chickpeas should be stored in the refrigerator; dried peas, beans, chickpeas, and lentils must be stored away from light and heat in a cool, dark spot. Peanuts are rich in fat, so they are best stored in the freezer to prevent rancid flavors from developing. Jícama should be stored unwrapped in a cool, dark spot; it can keep for up to 4 months. Peel the skin before use.
