Stir-frying is very similar to sautéing, with two notable differences: stir-frying is done over high heat, and the foods are cut into uniformly small pieces that cook very quickly. Before you start, make sure that all the ingredients are prepared, measured, and placed by the stove, as you won’t have time to stop cooking and chop.
