Clean and oil the rack

Use a wire grill brush with a scraping tool to clean the grill rack twice: once before you begin cooking, to remove any accumulated debris, and once after cooking, while the rack is still hot and is easier to clean. Just before putting the food on the grill, grasp a wadded–up paper towel with tongs, dip it into vegetable oil, and use it to lightly coat the grill rack with oil.
