Gas grills should be preheated for at least 15 minutes, following the manufacturer’s directions. Set one burner on high and the other(s) on low to create hot and cool zones. When using a charcoal grill, it’s best to use a chimney starter to light coals quickly and efficiently without the need for lighter fluid, which can give foods an “off” flavor. Once the coals are lit, arrange them on one side of the fire bed to create hot and cool zones. The food can be seared over the hotter area and then moved to the cooler area to finish cooking.
