Direct–heat grilling is the method most grilling cooks know best, with small pieces of food like burgers or chicken parts cooked directly over high heat in 20 minutes or less. Indirect heat cooks foods by reflected heat, much like roasting in an oven. This method is used for cooking larger pieces of food, like a pork loin or whole chicken.
