When slow cooking fatty meats such as short ribs, you’ll notice pools of fat on the surface of the cooking liquid. A large, shallow spoon or ladle is the ideal tool for skimming the fat away before the dish is served. You can also drape paper towels across the surface to soak up small amounts of fat.
