SELECT THE TIMING Each recipe in this book that has a slow cooker option provides two choices for cooking times. If you plan to start the slow cooker and leave for the day, the low–temperature setting is recommended. Generally, this setting, which produces a gentle simmer, also results in more tender food and concentrated flavor. To cook the food faster, choose the high–heat setting.
AVOID OVERFILLING For the best results, fill the slow cooker no more than one–half to two–thirds full.
UNCOVER WITH CARE It is sometimes necessary to lift the lid on the slow cooker, such as when adding ingredients or checking for doneness. Avoid doing this too often, as it lowers the cooking temperature inside the pot.
