To taste a salad dressing, try it on a single leaf of lettuce, rather than tasting it with a spoon. You will get a better sense of how it will taste in the finished salad. Adjust the seasonings, adding more oil, acidic ingredients, herbs, or salt and pepper if needed, before dressing the salad.
