The recipes in this book give you a choice between using purchased broths or homemade stocks. If you are short on time, good-quality broths can be found in cans and aseptic boxes on market shelves. Read the labels carefully to avoid unwholesome ingredients. If you have time to make your own, homemade stocks will deliver much better flavor. Several stocks are included in the Basic Recipes chapter. Be sure to make a big batch so you can freeze some for later use.
