Most sugars are extracted from either the tropical plant sugar cane or the temperate plant sugar beet. The juices are processed and concentrated to form crystals - the liquid left over is called molasses. Different processes affect the colour, texture and the flavour.
Like salt, sugar is a seasoning that brings out flavours such as fruitiness and spiciness. It also balances or masks sourness and bitterness. In desserts like rice pudding or baked fruits, you can happily adjust quantities and sugar types to taste. In cakes and ice creams, sugar also plays a structural role, so adjustments should be made with care.
