To Dry Morels

Cut the morels in half and wash them carefully, removing the base of the stem. Dry them with a towel, thread onto strings and hang them up to dry in a warm kitchen or over a radiator. When they are dry and crisp, after a day or two, take down and keep in a sealed jar in a warm, dry place. To reconstitute, just soak them in water for half an hour. They retain the flavour very well and can be used in place of fresh ones without any loss of quality.
