Infected Corn on the Cob

This is not wild, but a cultivated plant infected by fungi. Some years ago, in Mexico, someone discovered that the heads of corn infected with a fungal smut, Ustilago maydis, Corn Smut disease, are even more delicious to eat than the unblemished corn commonly found in our supermarkets and farm stalls. In Mexico the infected corn heads are called Cuitlacoche or Huitlacoche.
