My Pasta Machine Every chef will tell you that their best tool is their knife - and this is true. But ever since I first put my hand on a pasta machine years ago at Stephanie’s, it has become an indispensable tool right throughout my career. I remember the first pasta I ever made, under Stephanie’s instruction: beetroot noodles to go with venison. ‘How bizarre and beautiful,’ a food critic commented at the time. Berowra Waters saw a few pasta machines go to the scrapheap from overuse, as, for years, pasta was the staple for every table. But the reason I grew to love this little machine was the uses I got out of it apart from making pasta.
