Bread needs high temperatures, so you have to build up the fire in advance. To make the most of the heat produced, set aside some time to bake a whole range of treats that will keep either in the freezer or in air-tight tins. The ideal way to bake is to fire the oven over a period of time until the entire thermal mass is heated through to about 230°C/450°F. Then rake out the fire, leave for 20-30 minutes for the temperature to stabilize and then start baking.
