Highlights from A Feast of Fish

 

In every chefs repertoire there will be dishes that last the test of time, here are some of mine from A Feast of Fish, timeless dishes that define me as a chef and my career. Even today some 30+ years since the book was first published these can still be found on my menus every now and then, especially the sausage which can come in many guises but the base idea remains and endures.
