Christmas Cake (2)

Cooking time―2¼ hr.


  • 4 oz. butter
  • 12 oz. plain flour
  • 6 oz. moist sugar
  • ¼ oz. ground ginger
  • ½ lb. raisins
  • ¼ pt. cream
  • 5 tablesp. treacle
  • 2 eggs
  • 1 tablesp. vinegar
  • 2 level teasp. bicarbonate of soda


Grease and line a 7-in. cake-tin.

Warm the butter but do not allow it to oil. Sift the flour into a bowl, add the sugar, ginger and chopped raisins. Mix well, then stir in the butter, cream, treacle and well-beaten eggs. Beat for a few minutes. Pour the vinegar on to the soda and stir into the mixture. Put into the prepared cake-tin and place immediately in a warm oven (335° F., Gas 3). Reduce heat to 310° F., Gas 2.
