Parkin Biscuits

Cooking time—15–20 min.

Ingredients

  • 2 oz. plain flour
  • 2 oz. oatmeal
  • oz. sugar
  • ½ level teasp. ground ginger
  • ½ level teasp. powdered cinnamon
  • ¼ level teasp. mixed spice
  • 1 oz. lard or all-purpose shortening
  • 1 level teasp. bicarbonate of soda
  • oz. golden syrup
  • ¼ egg
  • blanched almonds

Method

Sift and mix flour, oatmeal, sugar and spices, and rub in the fat. Add soda, syrup and egg. Mix well to a fairly stiff consistency. Form into balls and place a little apart on greased baking-sheets; put 1 a blanched almond on top of each. Bake in a moderate to warm oven (350°–335° F., Gas 4–3). Allow to cool slightly before removing from sheet.
