  • 1 oz. butter or margarine
  • 1 level tablesp. flour
  • 5 tablesp. milk; or 3 tablesp. milk and 2 tablesp. ale or beer
  • 1 teasp. mixed mustard few drops of Worcester sauce
  • 4–6 oz. grated Cheddar cheese
  • salt and pepper
  • 4 slices of buttered toast


Heat the fat in a pan and stir in the flour. Cook for several minutes, stirring well. Add the milk and stir well over the heat until a smooth thick mixture, then add the ale, mustard, Worcester sauce, cheese and a good pinch of salt and pepper. Do not overcook the mixture otherwise the cheese will become oily. Spread on the slices of buttered toast and put under a hot grill until golden brown. Serve at once.
