NOT ONLY ARE OYSTERS NUTRITIONALLY WELL BALANCED, CONTAINING PROTEIN, CARBOHYDRATES AND LIPIDS, THEY ARE ALSO A GOOD SOURCE OF VITAMINS A, B1, B2, B3, C AND D. AS JONATHAN SWIFT IS OFTEN CREDITED AS SAYING, ‘HE WAS A BOLD MAN THAT FIRST ATE AN OYSTER.’

Ingredients

  • 1 × 85 g can smoked oysters
  • 1 Tbsp tangy mayonnaise
  • Tabasco sauce to taste

Method

  1. Using a hand-held blender, blitz together all the ingredients, except the salt and pepper.
  2. Season lightly.
  3. Transfer the pâté to a ramekin and garnish with fresh herbs.
