THE PETIT POIS IS A YOUNG, DE-HULLED PEA. IT WAS PART OF A COMPOSITION THAT PABLO PICASSO PAINTED IN 1911, KNOWN AS ‘LE PIGEON AUX PETITS POIS’. IT WAS STOLEN FROM A FRENCH MUSEUM IN 2010 AND REMAINS MISSING. WHAT’S NOT MISSING HERE, HOWEVER, IS THE POWERHOUSE OF FLAVOUR AND GOODNESS THAT THIS LITTLE PÂTÉ PROVIDES.

Ingredients

  • 3 eggs
  • 3 Tbsp olive oil
  • medium onions, chopped

Method

  1. Boil the eggs for 5 minutes, then leave them to cool before peeling and cutting into quarters.
  2. In a saucepan, heat the oil, add the onions and fry gently until softened.
  3. Stir in the green beans and petits pois.
  4. Continue to cook until the beans are soft.
