CARAMELISED ONIONS THAT TURN GOLDEN AND MELLOW ARE THE KEY TO A GOOD FRENCH ONION SOUP, WHICH ORIGINATED IN ITS CURRENT FORM IN THE 18TH CENTURY. THIS IS A HEARTY, WARMING SOUP THAT IS PERFECT TO SERVE TO GUESTS. FOR A MORE INDULGENT OPTION, SERVE WITH PARMESAN SHAVINGS OR GRILLED PARMESAN CROUTONS ON TOP.

Ingredients

  • 2 Tbsp olive oil
  • 2–3 large onions, finely sliced
  • 1 Tbsp

Method

  1. Add the oil and onions to a saucepan and cook for about 20 minutes, stirring often until the onions are soft and almost caramelised.
  2. Mix in the flour. Add the water, wine, stock, bay leaves and thyme, and bring to the boil.
  3. Leave to simmer for approximately 20 minutes.
  4. Using a slotted spoon, remove half of the onions from the saucepan. Blitz
