BULGUR WHEAT WILL PROVIDE YOU WITH A GOOD DOSE OF YOUR DIETARY FIBRE NEEDS AND IS ALSO LOW IN FAT. IT’S USED EXTENSIVELY IN MIDDLE EASTERN DISHES AND IS PERFECT AS THE BASE FOR A HEALTHY, FILLING SALAD. THE APRICOTS ADD SOME SWEETNESS BUT THE MINT ALSO HAS A STARRING ROLE.

Ingredients

  • ½ onion, finely chopped
  • ½ tsp minced garlic
  • olive oil

Method

  1. In a frying pan, gently sauté the onion and garlic in a little olive oil until softened.
  2. Place the water, bulgur wheat and apricots in a saucepan and simmer for about 20 minutes or until the water has been completely absorbed. Remove and place in a salad bowl.
  3. Add the onion and garlic, rocket, coriander and mint and mix through.
