GOAT’S MILK CHEESE IS A GREAT SUBSTITUTE FOR COW’S MILK CHEESE. IT IS RICHER IN VITAMINS AND MINERALS AND CONTAINS LESS LACTOSE, CALORIES, CHOLESTEROL AND FAT. WALNUTS ARE THE OLDEST KNOWN TREE FOOD, IN USE FOR SOME 12 000 YEARS. IT’S TRADITIONAL TO SERVE GOAT’S MILK CHEESE WITH WALNUTS …. SO WHY CHANGE?

Ingredients

  • 8 slices goat’s milk cheese
  • 8 slices small baguette, toasted
  • honey

Method

  1. Place a slice of cheese onto each of the slices of baguette.
  2. Add a drop of honey to each slice of cheese.
  3. Place under the grill until the cheese starts to brown.
  4. Mix together the salad greens, spring onions and walnuts.
  5. Whisk together the dressing ingredients and pour over the salad leaves, coating well.
