COPPA IS A TRADITIONAL ITALIAN PORK CUT THAT CAN BE EATEN AS IS OR COOKED. HOWEVER, ANY OTHER CURED MEAT COULD EASILY BE SUBSTITUTED. A VEGETABLE PEELER IS THE SECRET WEAPON HERE AS THE ASPARAGUS CREATES A VISUALLY APPEALING PRESENTATION THAT TASTES AS GOOD AS IT LOOKS.

Ingredients

  • 6–8 large asparagus spears
  • juice of ½ lemon
  • 8 slices coppa<

Method

  1. Using a vegetable peeler, finely slice the asparagus.
  2. Place in a bowl and coat with the lemon juice.
  3. Place the coppa on a baking tray and grill in the oven until crispy.
  4. Remove and leave to cool, then break up into smaller pieces.
  5. Arrange the asparagus slices on a platter and scatter over the Parmesan shavings and coppa.
