TECHNICALLY, AN ARTICHOKE IS A FLOWER THAT HASN’T YET BLOOMED. BUT HERE IT BLOSSOMS WHEN SERVED TOGETHER WITH TOMATOES AND MUSHROOMS. THE BALSAMIC REDUCTION PROVIDES AN ADDITIONAL FLAVOUR DIMENSION, WHILE THE ROASTED TOMATOES ADD DEPTH. BEST OF ALL, THIS DISH IS REMARKABLY EASY TO ASSEMBLE AND IS A REAL SHOW STOPPER ON THE TABLE.

Ingredients

  • 2 Tbsp chopped onion
  • 1 cup chopped button mushrooms
  • ¼ tsp

Method

  1. Gently fry the onion, mushrooms and thyme in a splash of the olive oil, until the onion and mushrooms have softened.
  2. Add the rosa tomatoes and balsamic vinegar and sauté until the tomatoes start to soften and blister.
  3. Sprinkle over the sugar or honey and stir through.
  4. Remove the mixture from the pan and set aside.
  5. Turn up the heat
