HAVE YOU EVER WONDERED WHAT THE DIFFERENCE IS BETWEEN MANGETOUTS AND SUGAR SNAP PEAS? THE PEAS INSIDE A MANGETOUT DON’T SWELL, WHEREAS IN SUGAR SNAPS THEY SWELL WITHIN THE POD AND YET THE WHOLE POD REMAINS EDIBLE. BUT WHICHEVER YOU PREFER, BOTH PROVIDE A GOOD SOURCE OF FIBRE.

Ingredients

  • 600 g fresh mangetout
  • 1 tsp olive oil
  • 2 cups

Method

  1. Place the mangetout in a pan of boiling water and simmer for about 5 minutes. Remove and refresh in cold water.
  2. Heat the olive oil in a griddle pan and gently fry the tomatoes until they blister. Leave to cool.
  3. Mix together the mangetout, feta, parsley, tomatoes, onion and almonds.
  4. Blend the dressing ingredients together and pour over the sa
