CHORIZO IS A SAUSAGE OF SPANISH ORIGIN, MADE OF COARSELY GROUND PORK AND HIGHLY SEASONED WITH GARLIC AND CHILLI. IT PAIRS WELL WITH THE BUTTER BEANS TO CREATE A SPICY, GARLICKY STARTER, OVERFLOWING WITH FLAVOUR.

Ingredients

  • 150 g spicy chorizo
  • 1 × 410 g can butter beans, drained and rinsed
  • ½—1

Method

  1. Slice the chorizo into 0.5cm-thick slices and then into half-moons.
  2. Fry in a pan until starting to crisp.
  3. Add the butter beans to the pan and stir.
  4. Mix together the paprika, vinegar, sherry, garlic and lemon juice.
  5. Pour over the chorizo and beans, coating well.
  6. Simmer gently until the vinegar and sherry have evaporated.</
