STUFFED VEGETABLES ARE POPULAR ALL AROUND THE MEDITERRANEAN, SO WHY NOT CONTINUE THE TRADITION HERE IN SOUTH AFRICA? RICOTTA MAKES THE PERFECT STUFFING AS IT HOLDS ITS SHAPE DURING COOKING AND SOFTENS WITHOUT MELTING OR OOZING INTO A MESS LIKE MANY OTHER CHEESES.

Ingredients

  • 2 long sweet red peppers
  • 2 Tbsp chopped fresh dill

Method

  1. Arrange the peppers on a baking tray and place under the grill. Keep turning until the skin has blackened on all sides.
  2. Transfer the peppers into a sealable bag for approximately 10 minutes, then remove and peel.
  3. Carefully slit each pepper along one side, then remove the pips.
