MORE OFTEN THAN NOT, MUSHROOMS ARE ADDED TO A STEW OR ARE MERELY ONE OF MANY OTHER INGREDIENTS IN A DISH. BUT HERE THEY ARE THE STAR OF THE SHOW. WITH A TOUCH OF GARLIC AND A SPLASH OF SHERRY VINEGAR AS ACCOMPANIMENTS, THEIR BEAUTIFUL GOLDEN COLOUR SHINES THROUGH.

Ingredients

  • 1 Tbsp olive oil
  • 125 g white mushrooms, roughly chopped
  • 125

Method

  1. Heat the oil in a pan until quite hot.
  2. Add the mushrooms to the pan, coating well with the oil.
  3. Do not stir until the mushrooms release all their liquid and turn a golden colour.
  4. Reduce the heat, then add the garlic, vinegar and thyme and cook until the vinegar has evaporated.
  5. Remove from the heat and season with a pinch of salt.</
