THIS IS A COOL, FRESH DESSERT, IDEAL TO SERVE AFTER A HEARTY MEAL. IT’S PERFECT TO MAKE WHEN ENTERTAINING GUESTS AS IT CAN BE PREPARED IN ADVANCE. ALL YOU NEED TO DO IS SPRINKLE THE PARMESAN CRUMBLE OVER JUST BEFORE SERVING.

Ingredients

  • ¼ watermelon
  • ½ melon or 1 pawpaw
  • fresh mint leaves for garnish

Method

  1. Preheat the oven to 170°C. Grease a baking tray.
  2. First make the Parmesan crumble. In a bowl, combine the Parmesan and flour, then mix in the butter until it becomes crumbly.
