THIS IS AN INDULGENCE WITHOUT THE GUILT. IT’S LOWER IN CALORIES THAN THE USUAL CHOCOLATE MOUSSE AND THE ADDED SPICINESS OF THE DARK CHILLI CHOCOLATE IS A REAL SURPRISE. USE AT LEAST 70% COCOA CHOCOLATE TO ENJOY THE HEALTH BENEFITS.

Ingredients

  • 200 g chilli-flavoured dark chocolate (at least 70% cocoa)
  • 2 Tbsp cocoa powder

Method

  1. Melt the chocolate in a double boiler or in the microwave in 40-second bursts.
  2. Combine the cocoa, vanilla essence and cold water, then pour into the melted chocolate.
  3. Add the boiling water to the chocolate and mix until silky smooth.
  4. Whisk the egg whites until soft peaks form.
