By all means dress the salad on a bed of buttery lettuce. And if you want to add grapes, chicken or anything else, who am I to stop you?
Cut the celery at the base, remove the coarse outer stalks and save for a soup or stew. Remove (but keep) all the leaves from the tops, then slice the stalks into thin strips. Wash these well and soak, with the leaves, in a bowl of ice-cold water for 10 minutes before draining and drying. Peel the apples, halve them and remove the cores, then roll them in half of the lemon juice before slicing
