Left to my own devices, I might omit the sugar entirely from my apple sauce, but many would find that too tart. However, if using eating apples the sugar must be omitted altogether.
Peel, quarter and remove the cores of the apples, then roll them in the lemon juice. Place them in a saucepan with the sugar and spices, add a few tablespoons of water, cover with buttered paper and stew very gently for 30 minutes, making sure the mixture does not dry out. Mash the mixture with the back of a fork to get a good sauce consistency. Serve at room temperature.
