This is an exuberant, spicy red cabbage that will set the goose off to a nicety.


For the Spiced Red Cabbage

  • 4 tablespoons olive oil
  • 2 onions, peeled and thinly sliced

Heat a capacious saucepan with 2 tablespoons of the olive oil and stew the onions, garlic, ginger and chillies gently for 10 minutes until soft. In a separate, very large saucepan or frying pan, heat 2 more tablespoons of olive oil and fry the red cabbage over a high heat for 5 minutes, in two batch
