Considering the amount of both pastries and sea buckthorn I saw — and ate — in my travels around the Baltic States, I was a bit sad not to come across them together. On my return home, I decided to put things right and so developed this simple recipe to unite two Baltic favourites. The sea buckthorn berries give a pleasant tang to the sweet crumbly pastry, but this could instead be added by other tart berries, such as raspberries or blackberries.
