In the late summer, chanterelles are on every menu in the Baltics and are sold on many a street corner. This chanterelle omelette was the first meal we shared together as a family when we were reunited in Tallinn after a couple of months apart; my partner, Yasin, had been working on the other side of the world and was craving something European, seasonal and homely. If you can’t find chanterelles, you could make this omelette with a mixture of other seasonal mushrooms.
