The classic Lithuanian cepelinai dumplings are usually stuffled with minced meat and served with soured cream and fried bacon bits, so if you’re not cooking for vegetarians, feel free to add bacon to the onion topping. Conversely, the dumplings are vegan — it’s only the accompanying soured cream that isn’t, and you could easily leave it out. Dried lovage (lubczyk) is available from all Polish shops, but if you can’t get your hands on any, you can replace it with dried oregano.
