While this tart might be inspired by sklandrausis — a Latvian sweet carrot tart made with rye pastry, and which is considered almost sacred — I wouldn’t dream of calling my recipe that because it is really something quite difflerent. When I was in Estonia, I was served a sort of savoury version at a ‘house cafe’ (the Estonians are fond of turning their homes into pop-up cafes), and so my dish is derived from a combination of those two charming carrot tarts, with some coriander thrown
